  • 6 jalapenos (halved and seeds removed)
  • 2 tablespoons olive oil
  • 6 strips thick-cut Turkey Bacon
  • 1 1/4 cup cheddar cheese
  • 8 oz cream cheese (1/3 less fat)
  • 1/2 cup light sour cream
  • 1/4 cup low-fat milk
  • 1 teaspoon cayenne pepper
  • 3 cups fresh cauliflower florets

Instructions

  1. Preheat your oven to 375°F.
  2. On a baking sheet, place the chicken breast and halved jalapenos; drizzle with olive oil and sprinkle with salt. Bake for 20–25 minutes until cooked through.
  3. In a mixing bowl, combine 3/4 cup cheddar cheese, cream cheese, light sour cream, low-fat milk, and cayenne pepper until creamy.
  4. Shred the cooked chicken and chop the roasted jalapenos; crumble the Turkey Bacon.
  5. Mix shredded chicken, chopped jalapenos, and three-fourths of the crumbled Turkey Bacon into the cream cheese mixture.
  6. In a baking dish, layer fresh cauliflower florets on the bottom, pour over the cream cheese mixture, then top with remaining cheddar cheese, jalapenos, and Turkey Bacon.
  7. Bake for about 20 minutes until golden brown.
