  • 4 large eggs
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 1/2 teaspoons all-purpose flour (for cheesecake layer)
  • 1 cup finely grated carrots
  • Optional: Chopped nuts for garnish

Instructions

  1. Preheat the oven to 350°F and grease a 9-inch springform pan.
  2. For the cheesecake layer, beat cream cheese and sugar until smooth. Mix in flour, eggs, vanilla extract, and sour cream then pour into the pan.
  3. For the carrot cake layer, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg in one bowl. In another bowl, mix oil and applesauce with sugars; add eggs and combine. Gradually stir in dry ingredients and grated carrots.
  4. Carefully pour the carrot cake mixture over the cheesecake layer and smooth the top.
  5. Bake for about 60 minutes until set with a slight jiggle in the center.
  6. Cool at room temperature before refrigerating for at least four hours or overnight.
