  • ½ cup apple juice

  • 1 large tart apple (peeled and shredded)
  • For caramel frosting: ½ cup packed brown sugar
  • 3 tablespoons butter
  • 3 tablespoons apple juice
  • 2 ⅔ cups powdered sugar
  • optional chopped pecans

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, cream together softened butter and brown sugar until smooth.
  3. Add baking soda, apple pie spice, salt, egg, and apple juice; mix until combined.
  4. Gradually mix in flour to form a dough and fold in shredded apple.
  5. Line a baking sheet with parchment paper; scoop tablespoon-sized portions onto the sheet, spacing them apart.
  6. Bake for about 10 minutes until golden brown around edges.
  7. For the caramel frosting, melt brown sugar and butter in a saucepan; stir in apple juice, then whisk in powdered sugar until thickened.
  8. Frost cooled cookies and sprinkle with chopped pecans if desired.
