  • 5 strips prosciutto
  • 8 oz farfalle pasta
  • 1 cup cherry tomatoes (halved)
  • 1 cup fresh mozzarella balls (halved)
  • 1/2 cup fresh basil leaves (thinly sliced)
  • 3 tbsp extra virgin olive oil
  • 1.5 tbsp balsamic vinegar
  • 1 tbsp lemon juice
  • 1 garlic clove (grated)
  • 1/4 tsp red pepper flakes
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 400°F and arrange prosciutto on a foiled baking sheet. Bake for 10–12 minutes until crispy.
  2. Dice the cooled prosciutto into desired sizes.
  3. Cook farfalle in boiling water according to package instructions; drain and rinse under cool water.
  4. Combine olive oil, balsamic vinegar, lemon juice, grated garlic, red pepper flakes, salt, and pepper in a bowl.
  5. In a large mixing bowl, combine cooked pasta with the vinaigrette, diced prosciutto, cherry tomatoes, mozzarella balls, and basil. Toss well and serve immediately or chill before serving.
