Ingredients
- 1 lb boneless, skinless chicken breasts
- 12 oz rotini pasta
- 4 cloves garlic
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Cajun seasoning
- Salt and black pepper to taste
- 2 tbsp olive oil
- 3 tbsp unsalted butter, divided
- 1 tsp Italian seasoning
- Crushed red pepper flakes to taste
- Fresh chopped parsley for garnish
Instructions
- Cook rotini in salted boiling water until al dente (9-10 minutes). Reserve ½ cup pasta water, drain, and set aside.
- Season chicken with Cajun seasoning, salt, and pepper.
- Heat olive oil and 1 tbsp butter in a skillet over medium-high heat; sear chicken for 7-8 minutes until cooked through. Add half the garlic during the last minute.
- Lower heat; add remaining butter and garlic to the skillet. Sauté until fragrant.
- Pour in heavy cream; simmer for 2-3 minutes until slightly thickened.
- Stir in mozzarella and Parmesan until melted into the sauce; season to taste.
- Combine cooked rotini with the sauce; add reserved pasta water if needed to loosen.
- Serve hot, garnished with parsley.
