  • 16 oz frozen diced butternut squash
  • 1.5 cups fresh chopped tomatoes
  • 1/2 yellow onion
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried thyme
  • 1 lb pasta
  • 1/3 cup reserved pasta water

Instructions

  1. Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.
  2. Place the frozen butternut squash, chopped tomatoes, and sliced onion on the baking sheet.
  3. Drizzle with olive oil and season with salt, pepper, and thyme. Mix well.
  4. Roast in the oven for about 20 minutes until tender.
  5. While roasting, cook pasta according to package instructions until al dente.
  6. Reserve 1/3 cup of starchy pasta water before draining the pasta.
  7. Blend the roasted vegetables with reserved pasta water until smooth.
  8. Combine the blended sauce with cooked pasta and toss gently to coat.
  9. Serve hot, optionally garnished with parmesan cheese or nutritional yeast.
