  • 1/2 cup water
  • 1 tbsp apple cider or white vinegar
  • 1 whole egg (whisked)
  • 3 cups fresh sliced peaches
  • 3 cups fresh strawberries (hulled and quartered)
  • ¼ cup granulated sugar
  • ¼ cup + 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • ¼ tsp fine sea salt
  • 23 tbsp Turbinado sugar (optional)

Instructions

  1. Start by preparing the brown butter: melt cold unsalted butter in a saucepan over medium heat until golden brown and nutty.
  2. Make the crust: In a bowl, mix flour and salt, then incorporate the cooled brown butter. Gradually add water and vinegar to form dough. Chill for at least one hour.
  3. Prepare the filling: Combine sliced peaches, quartered strawberries, sugar, cornstarch, lemon juice, lemon zest, and salt in another bowl.
  4. Roll out one disc of dough and place it in your pie dish; fill with the fruit mixture.
  5. Cover with the second disc of dough or create a lattice design.
  6. Bake at 375°F (190°C) for about 70 minutes until golden brown.
