- 3 cups fresh strawberries (hulled and quartered)
- ¼ cup granulated sugar
- ¼ cup + 1 tbsp cornstarch
- 1 tbsp lemon juice
- 1 tsp lemon zest
- ¼ tsp fine sea salt
- 2–3 tbsp Turbinado sugar (optional)
Instructions
- Start by preparing the brown butter: melt cold unsalted butter in a saucepan over medium heat until golden brown and nutty.
- Make the crust: In a bowl, mix flour and salt, then incorporate the cooled brown butter. Gradually add water and vinegar to form dough. Chill for at least one hour.
- Prepare the filling: Combine sliced peaches, quartered strawberries, sugar, cornstarch, lemon juice, lemon zest, and salt in another bowl.
- Roll out one disc of dough and place it in your pie dish; fill with the fruit mixture.
- Cover with the second disc of dough or create a lattice design.
- Bake at 375°F (190°C) for about 70 minutes until golden brown.
