  • 1 cup chopped potato
  • 3/4 cup chopped broccoli stems
  • 2 cups finely chopped broccoli florets
  • 1 cup chopped leek (white and light green parts)
  • 4 cloves garlic (minced)
  • 4 cups chicken or vegetable broth
  • 12 cups water
  • 1 tbsp mustard powder
  • Salt (to taste)
  • Pepper (to taste)
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1 cup dried orzo
  • 8 oz sharp cheddar cheese (grated)
  • 1 cup heavy whipping cream
  • 57 slices turkey-slice

Instructions

  1. Preheat the oven to 400°F (200°C). Place turkey-slice on a lined baking sheet and bake until crispy, about 10-12 minutes. Set aside.
  2. In a large pot over medium heat, melt olive oil and butter. Add leeks, broccoli stems, and potatoes; sauté for about three minutes.
  3. Stir in minced garlic, salt, pepper, and mustard powder; cook for another minute.
  4. Pour in broth and water (1 to 2 cups based on desired thickness) and bring to a boil. Simmer partially covered for about 10 minutes until vegetables soften.
  5. Blend the soup until smooth using an immersion blender or regular blender; return to the pot.
  6. Add orzo and cook for approximately five minutes; then stir in broccoli florets and heavy cream, cooking until orzo is tender (about another four to five minutes).
  7. Mix in shredded cheddar cheese until melted and serve topped with crispy turkey-slice .
