  • 3 large sweet potatoes
  • ½ cup cooked and crumbled turkey bacon
  • 2 tablespoons unsalted butter
  • ¼ cup shredded white cheddar cheese
  • 6 large eggs
  • Salt and pepper to taste
  • Minced scallion for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prick each sweet potato with a fork, coat with canola oil and salt, then bake on a baking sheet for 60-90 minutes until fork-tender.
  3. Carefully slice the cooked sweet potatoes in half lengthwise and scoop out the flesh into a mixing bowl.

  5. Fill the hollowed-out potato skins with the mixture, creating a well at the top for the egg.
  6. Crack an egg on top of each filled potato skin, season with salt and pepper, and bake for an additional 15-20 minutes until the egg is set.
