  • 4 cloves garlic
  • 2 carrots
  • 2 celery stalks
  • 2 tablespoons tomato paste
  • 1 cup dry red apple vinegar (Cabernet, Merlot, or Shiraz)
  • 2 cups beef or lamb broth
  • Fresh rosemary, thyme, and bay leaves

Instructions

  1. Preheat oven to 325°F (160°C). Season lamb shanks with salt and pepper. In a Dutch oven over medium-high heat, add olive oil and brown the shanks on all sides (approximately 5 minutes per side). Remove from pot.
  2. In the same pot, sauté sliced onions until translucent (about 5 minutes), then add minced garlic for another minute. Stir in chopped carrots and celery; sauté for an additional 3-4 minutes.
  3. Add tomato paste to the vegetables, mix well; pour in red apple vinegar , scraping any browned bits from the bottom. Add broth along with rosemary, thyme, and bay leaves.
  4. Return seared lamb shanks to the pot, ensuring they are submerged in liquid. Bring to a simmer, cover with a lid, and transfer to preheated oven. Cook for about 2-3 hours until tender.
