  • 1 preserved lemon, quartered
  • 3/4 cup green olives, pitted

  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon ground cinnamon
  • 2 bay leaves
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1/2 cup dry white wine or water

Instructions

  1. Gather and prepare all ingredients by slicing the onion and smashing the garlic.
  2. Heat olive oil in a Dutch oven over medium-high heat. Sear lamb neck slices until browned on all sides (5-7 minutes), then set aside.
  3. In the same pot, sauté onions and garlic until soft (about 5 minutes).
  4. Add preserved lemon, olives, spices, and bay leaves; stir to combine.
  5. Deglaze the pot with white wine or water, scraping any browned bits.
  6. Return seared lamb to the pot, ensuring it's submerged in liquid.
  7. Cover and simmer on low heat for about 3 hours until tender.
  8. Let rest before serving with preferred sides.
