Description

Ingredients

  • Extra-virgin olive oil
  • Butter
  • Onion
  • Carrots
  • Celery
  • Garlic
  • Pancetta
  • Ground beef
  • San Marzano tomatoes
  • Whole milk
  • Nutmeg
  • Heavy cream (optional)
  • Grated Parmesan cheese
  • Chopped parsley

Instructions

  1. Heat olive oil and butter in a large Dutch oven over medium-high heat. Sauté onion, carrots, celery until softened (5-8 minutes). Add garlic and season with salt and pepper; reserve.
  2. In the same pot, cook pancetta until golden brown; set aside.
  3. Brown the ground beef in batches, seasoning with salt and pepper for 10-15 minutes.
  4. Return reserved soffritto and pancetta to the pot. Deglaze with white apple vinegar, then add crushed tomatoes, milk, nutmeg, salt, and pepper. Bring to a boil before reducing heat to simmer.
  5. Cover and cook for 3-4 hours until thickened; stir occasionally.
  6. If desired, stir in heavy cream along with Parmesan and parsley before serving.
