  • 1/2 cup Medjool dates
  • 1/2 cup walnuts
  • 1 cup raw cashews (soaked overnight)
  • 1/2 cup chilled coconut cream
  • 1/4 cup maple syrup
  • 1/2 cup frozen blueberries (thawed)
  • 1 tbsp acai powder

Instructions

  1. To make the base, blend dates, walnuts, shredded coconut, and salt until crumbly. Press into a lined springform tin and freeze.
  2. For the filling, blend soaked cashews, coconut cream, melted coconut oil, lemon juice and zest, maple syrup, blueberries, and acai powder until smooth.
  3. Pour the filling over the base in the springform tin and smooth out. Freeze for at least 4 hours or overnight.
  4. Allow to thaw at room temperature for 10 minutes before serving. Decorate with fresh fruits or nuts if desired.
