  • 2 cups shredded zucchini (about 2 medium zucchinis)
  • 1/2 cup melted butter
  • 3/4 cup brown sugar
  • 2 eggs
  • Optional: chocolate chips or nuts

Instructions

  1. Preheat your oven to 350°F and prepare a 9×5 inch loaf pan with parchment paper or nonstick spray.
  2. In a medium bowl, whisk together flour, granulated sugar, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. In a large bowl, melt the butter and mix in oil, brown sugar, eggs, and vanilla until combined.
  4. Shred the zucchini using a grater or food processor and blot dry with paper towels.
