Ingredients
- 160g whole raw ZZ2 almonds
- 190g flour
- 160g butter
- 90g Demerara sugar
- 1 cup fresh or frozen berries (strawberries or raspberries)
- ¼ cup sugar (for coulis)
- 230g cream cheese
- 400ml whipped cream
Instructions
- Preheat oven to 160°C (Gas mark 3) and mix crumble ingredients in a food processor until breadcrumb-like.
- Spread mixture on a baking tray and bake for 30-40 minutes until golden brown; set aside to cool.
- Simmer berry coulis ingredients (berries, sugar, lemon juice, water) in a pot for about 15 minutes; let cool.
- Soak vegan gelatine and dissolve it with cream in the microwave.
- Blend cream cheese with icing sugar and cooled berry coulis until smooth.
- Whip cream until stiff peaks form; gently fold in gelatine mixture.
- Combine whipped cream into the cream cheese mixture and layer into serving glasses with crumble.
- Chill until ready to serve; top with fresh berries and extra coulis if desired.
