  • 1/4 cup fresh dill (chopped)
  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon kosher salt

Instructions

  1. In a small bowl, whisk together lemon juice and salt until dissolved.
  2. Gradually add olive oil while whisking to create the dressing.
  3. In a large mixing bowl, combine sliced beets with half the dressing; let sit.
