  • 2 cups cooked jasmine rice
  • 1/2 cup frozen peas
  • 1/2 cup diced bell peppers
  • 2 green onions
  • 3 tbsp soy sauce
  • 2 tbsp sweet chili sauce
  • 2 cloves garlic
  • 1 tbsp ginger
  • 2 tbsp vegetable oil

Instructions

  1. Prepare ingredients by chopping chicken into bite-sized pieces, dicing bell peppers, and mincing garlic and ginger.
  2. Heat wok or large skillet over medium-high heat. Add vegetable oil and sear chicken for 5-7 minutes until golden brown. Remove and set aside.
  3. Sauté minced garlic and ginger for about 30 seconds until fragrant.
  4. Stir-fry bell peppers and peas for 2-3 minutes until tender yet crisp.
  5. Add cooked rice, soy sauce, and sweet chili sauce. Mix well to coat everything evenly, then return the chicken to heat through.
