  • 23 cups broccoli florets
  • 12 lbs salmon filets
  • 68 tablespoons butter
  • 1 clove garlic, minced
  • 1 shallot, minced
  • 1/2 cup heavy cream
  • Juice of 1 lemon
  • Fresh herbs (thyme, parsley or basil)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
