  • 3 pounds chuck roast
  • 2 pounds bone-in short ribs
  • 8 guajillo chiles
  • 4 ancho chiles
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 tablespoons avocado oil
  • 1 large onion (quartered)
  • 1 garlic bulb (cut the tip off)
  • 1 carrot (cut in half crosswise, then cut in half)
  • 2 bay leaves
  • 5 cups water
  • 2 cups beef broth
  • 2 teaspoons chicken bouillon
  • 12 teaspoons chili powder
  • 1 teaspoon Mexican oregano
  • 1 teaspoon ground cumin
  • Fresh cilantro (diced)
  • Fresh lime juice
  • White onion (diced)

Instructions

  1. Sear meat: Cut beef into chunks, season with salt and pepper, and sear in a Dutch oven until browned.
  2. Combine ingredients: Add seared meat, onion, garlic, carrots, bay leaves, dried chiles, beef broth, and water to the pot.
  3. Season: Stir in chicken bouillon, oregano, cumin, and salt; bring to a boil.
  4. Skim impurities: After boiling for 30 minutes, skim the surface for clarity.
  5. Blend sauce: Remove softened vegetables and chiles; blend until smooth before returning to the pot.
  6. Simmer: Cover loosely and let simmer for about 3 hours until meat is tender.
  7. Serve warm topped with cilantro, onion, and lime juice.
