  • 2 cups long-grain rice
  • 4 cups water
  • 1 can (15 oz) pigeon peas
  • 1/4 cup olive oil
  • 1/2 cup onion, finely chopped
  • 1/2 cup green bell pepper, finely chopped
  • 1/2 cup tomato sauce
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • Salt to taste

Instructions

  1. Heat olive oil in a heavy-bottomed pot over medium heat. Sauté the chopped onions and green peppers until softened (about 5 minutes). Add garlic and cook for another minute before stirring in tomato sauce, cumin, and oregano.
  2. Add rice to the pot and stir well to coat each grain in the sofrito mixture. Then add pigeon peas with their liquid.
  3. Pour in water and season with salt. Bring to a boil over high heat. Once boiling, cover the pot and reduce heat to low. Simmer for about 20-25 minutes until the rice is fully cooked.
  4. Remove from heat and let it sit covered for an additional 5 minutes before fluffing with a fork.
