- 2 cups long-grain rice
- 4 cups water
- 1 can (15 oz) pigeon peas
- 1/4 cup olive oil
- 1/2 cup onion, finely chopped
- 1/2 cup green bell pepper, finely chopped
- 1/2 cup tomato sauce
- 3 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon oregano
- Salt to taste
Instructions
- Heat olive oil in a heavy-bottomed pot over medium heat. Sauté the chopped onions and green peppers until softened (about 5 minutes). Add garlic and cook for another minute before stirring in tomato sauce, cumin, and oregano.
- Add rice to the pot and stir well to coat each grain in the sofrito mixture. Then add pigeon peas with their liquid.
- Pour in water and season with salt. Bring to a boil over high heat. Once boiling, cover the pot and reduce heat to low. Simmer for about 20-25 minutes until the rice is fully cooked.
- Remove from heat and let it sit covered for an additional 5 minutes before fluffing with a fork.
