Ingredients
- 2 kg apples (Fuji, Royal Gala or Pink Lady)
- 300 g granulated sugar (divided)
- 1 tbsp cornstarch
- 4 egg yolks
- 600 ml milk (whole, skimmed or dairy-free)
- 2 tsp vanilla bean paste
- 1/4 tsp salt
Instructions
- Preheat oven to 180°C (350°F). Peel and core apples, then slice thinly. Mix sliced apples with 150 g sugar and salt; let sit for 15 minutes.
- Cook apple mixture in a saucepan over medium heat until softened, about 10-15 minutes. Allow to cool slightly.
- For the custard, whisk together remaining sugar, cornstarch, and egg yolks in another saucepan. Gradually add milk while whisking continuously. Heat over medium while stirring until thickened (10-15 minutes). Stir in vanilla bean paste and salt.
- In a baking mold, layer half of the cooked apples followed by half of the custard. Repeat layers.
- Cover with foil and bake for 60-80 minutes until set. Cool before serving.
