  • 2 kg apples (Fuji, Royal Gala or Pink Lady)
  • 300 g granulated sugar (divided)
  • 1 tbsp cornstarch
  • 4 egg yolks
  • 600 ml milk (whole, skimmed or dairy-free)
  • 2 tsp vanilla bean paste
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 180°C (350°F). Peel and core apples, then slice thinly. Mix sliced apples with 150 g sugar and salt; let sit for 15 minutes.
  2. Cook apple mixture in a saucepan over medium heat until softened, about 10-15 minutes. Allow to cool slightly.
  3. For the custard, whisk together remaining sugar, cornstarch, and egg yolks in another saucepan. Gradually add milk while whisking continuously. Heat over medium while stirring until thickened (10-15 minutes). Stir in vanilla bean paste and salt.
  4. In a baking mold, layer half of the cooked apples followed by half of the custard. Repeat layers.
  5. Cover with foil and bake for 60-80 minutes until set. Cool before serving.
