  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup room temperature butter
  • 3/4 cup granulated sugar
  • 2 large eggs (room temperature)
  • 3/4 cup buttermilk
  • 2 teaspoons vanilla extract
  • 2 medium apples (peeled, cored, and diced)
  • 1/3 cup brown sugar

Instructions

  1. Preheat oven to 350°F (180°C). Grease and line a 9 x 4 inch baking tin with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Set aside.
  3. In another bowl, cream butter and granulated sugar until light and fluffy. Add eggs one at a time, then mix in vanilla.
  4. Gradually incorporate the dry mixture into the wet mixture, alternating with buttermilk until just combined.
  5. Toss diced apples with brown sugar and remaining cinnamon. Fold half the batter into prepared tin, add half of the apple mixture, then layer remaining batter and apples.
  6. Bake for 55–65 minutes. Cool before slicing.
