  • 6 cups low-sodium chicken broth
  • 2 medium carrots, sliced
  • 2 celery stalks, chopped
  • 1 cup kale or spinach, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté chopped onion for about 3–4 minutes until soft.
  3. Add minced garlic and grated ginger; cook for another minute.
  4. Stir in ground turmeric and mix well.
  5. Add chicken and pour in the chicken broth.
  6. Bring to a boil, then reduce to a simmer; cover and cook for about 30 minutes.
  7. Remove chicken, shred it with forks, and return it to the pot.
  8. Add carrots and celery; cook for another 10–15 minutes until tender.
  9. Stir in kale or spinach; cook until wilted.
  10. Season with salt to taste before serving.
