  • 130 g powdered sugar
  • 120 g almond flour
  • 105 g egg whites (about 3)
  • 100 g granulated sugar
  • 1 teaspoon vanilla bean paste
  • Red and blue food gel
  • 113 g heavy cream (cold)
  • 113 g mascarpone cheese (cold)

Instructions

  1. Prepare a parchment paper template by tracing circles.
  2. Sift almond flour and powdered sugar together twice.
  3. Whip egg whites and granulated sugar over simmering water until dissolved; then whip until stiff peaks form.
  4. Divide meringue into two bowls; add dry ingredients and food gels to each.
  5. Gently fold mixtures until smooth; pipe onto baking sheets using the template.
  6. Let rest for 30 minutes, then bake at 300°F for 12-14 minutes.
  7. Allow macarons to cool before filling with mascarpone frosting.
  8. Chill before serving.
